This is a traditional Mexican dish also known as stewed meat and potatoes. Filling, hearty and flavorful. Great on a winters night served with refried beans and tortillas. In this recipe I used pork but you can also use beef or chicken too.
Ingredients:
3-4 Boneless Pork Loin Chops cut up into chunks
2 Large Russet Potatoes cut up into chunks
1 Cup Chicken Broth
1 Small Can Tomato Sauce
1 Small Onion Cut Up Into Slices
1/2 To Whole Jalapeno Seeds Removed And Cut Into Thin Slices
2 Dried Chili De Arbol Peppers
2 Cloves Of Garlic Minced
Mrs Dash Southwest Chipotle Seasoning
1/4 Tsp Black Pepper
1 Teaspoon Ground Cumin
1 Teaspoon Chili Powder
Place meat in Crock Pot, I use a 5 Quart.
Season meat with Mrs Dash and Black Pepper.
Place Onion, Garlic and Jalapeno in Crock Pot.
Place Potatoes in Crock Pot.
In a separate medium sized bowl mix Chicken Broth, Tomato Sauce, Cumin and Chili Powder together.
Pour into Crock Pot.
Add Dried Chili De Arbol Peppers.
Give it a good stir.
Cover and cook on low for 8 hours.
Remove Chili De Arbol Peppers and Discard.
Serve and enjoy!
Seasoned Meat, Onions, Garlic and Jalapeno added to crock.
Ready to cook.
Finished and ready to eat!
Served with refried beans and flour tortillas.
